Haldi Doodh with Gur

Haldi doodh the way it's actually made at home: milk simmered gently with turmeric and crushed black pepper, sweetened with jaggery off the heat so it doesn't split. No powders, no premixes — a small warm ritual at the end of the day.

Method

    Bring the milk to a gentle simmer with the turmeric and crushed pepper, stirring so nothing catches.

    Simmer 4–5 minutes on low so the turmeric loses its raw edge.

    Take the pan off the heat, let it stop bubbling, then stir in the jaggery until it melts. Adding gur off the boil keeps the milk from splitting.

    Pour into cups; float a few drops of ghee on top if you like. Drink warm.

  • Always add jaggery off the heat — hot-boiling milk plus gur can curdle.
  • A strand or two of saffron makes it a festive nightcap.
